Potato and Chard Quiche
Ingredients
- 9 inch prepared pie crust
- 10 oz. red potatoes, halved and sliced
- 1 small leek, halved and thinly sliced
- 1 small bunch of chard, stemmed and chopped
- 2 T olive oil
- 1/2 t dried thyme
- 5 large eggs
- 1/4 c sour cream
- 1 t sea salt
- 1/4 t ground black pepper
- 1/4 c parmesan cheese
