French Onion and Cremini Mushroom Soup
Ingredients
- 6 T unsalted butter
- 2 1/2 pounds large yellow onions, julienned
- 1/2 c dry white wine or dry vermouth
- 3 large garlic cloves, minced
- 8 oz cremini mushrooms, sliced
- 1 T honey
- 6-8 c chicken or vegetable broth
- 1 t dry thyme
- 1 T Worcestershire sauce
- 1/2 c heavy cream
- 1 1/2 t salt
- 1 t ground black pepper
- 1 baguette, sliced
- 12 oz gruyere, grated
