French Onion and Cremini Mushroom Soup

  • 2 1/2 pounds large yellow onions, julienned
  • 1/2 c dry white wine or dry vermouth
  • 3 large garlic cloves, minced
  • 8 oz cremini mushrooms, sliced
  • 1 T honey
  • 6-8 c chicken or vegetable broth
  • 1 t dry thyme
  • 1 T Worcestershire sauce
  • 1/2 c heavy cream
  • 1 1/2 t salt
  • 1 t ground black pepper
  • 1 baguette, sliced
  • 12 oz gruyere, grated
